Happy Thanksgiving

Thanksgiving a time of good food and friends. As the holidays begin, I really wish the rest of the year could hold a little of that "magic".

As for the food...this Thanksgiving brought with it a new wonderful recipe.

Peach Raisin Crostata (this is a "pie" with only a bottom crust. It is really quick and easy to make)

1 C raisins
1/2 c granulated sugar (or Splenda)
2 tbs all purpose flour
1/2 tsp ground cinnamon
1/4 tsp salt
4 c fresh peaches sliced (or one 16-oz bag of frozen peach slices)
1 tbs lemon juice
1/4 tsp vanilla extract
1 9-inch pie crust

Heat: oven to 425 degrees
Combine: raisins, sugar flour, cinnamon and salt. Mix with Peaches, vanilla and lemon juice (if using frozen peaches, defrost first)
Place 9-in round pie dough on a rimmed baking sheet. Mound fruit in center of dough leaving a 1-2 inch border. Fold edge of dough up around fruit gently pleating and pressing dough against fruit.
Bake: 10 minutes at 425 then 20-25 minutes at 350 degrees.

After cooling completely on pan, transfer to plate and dust with powdered sugar.
