Leaving the new kitties for a moment with the assurance that all is going very well with them, I turn to my other love.... experimenting in the kitchen.
Reduced fat recipes are fun to experiment with. Replacing fat with fruit puree is generally an easy one to one... not much experimentation needed. Except for cookies which don't do well, generally, with this substitution.
I decided to try anyway. What the heck, I have turkeys that will eat any mistake and love it. So, I experimented with chocolate chip cookies.
I replaced half the butter with an equal amount of pumpkin puree and continued with the recipe as shown on the back of the bag. The substitution corrected two problems I have always had with that cookie... shape and softness.
The cookies spread less creating a puffy cookie. They were soft and remained soft for several days. There was no difference in taste. Yea... Success !!! No turkey food.
These might even make it to the Fair next summer!!
