Grits

You never know what the day will be like when you start by having to chew your grits. Haven't had grits in a long time. Midwesterners don't know what grist are. That seems strange since there is so much corn grown in the Midwest. But you're not supposed to have to chew them.

Well it was not a bad omen. The day was cold and foggy. A great day for inside activities. I finished the Roman shade for the windoe in the bedroom and I made potato soup...one of our favorites. My first try was a great success. No recipe...just a feeling. It went something like this...

4 cups of potatoes pealed and cubed...some large some small...you want some to cook to death.
1/2 large onion chopped
3-4 stalks celery chopped (as small or large as you want)
6-7 cups water
1 tbs beef bullion (granuals)
1 tbs salt
1 tbs black pepper
2 tbs parsley flakes

Combine all and cook until the smaller potatoes cook to mush

Add 1/2 stick buter

Mix together well
3 tbs flour
2 cups milk

Do not drain potatoes. Add milk mixture to thicken.
Add instant potatoes to thicken further and add more flavor.

Really thick and good. Makes a hardy meal.

Great for a cold day. I may need it again in the winter to come.
